New London meat market back in business

New London meat market, Ray’s Meats, an established meat market and game processing site, is back in business.
Luke and Jenny Williams have purchased the market and are in the processing of getting accustomed with running the business of a meat market.
“We purchased the shop back in November of 2021,” said Jenny Williams. “We decided that it was time to have a change in career. My husband is from Danville, and I grew up in Burlington. We are definitely locals to the area.”
Jenny was an Assistant Manager at Gators in Burlington, and Luke was a heavy equipment operator with Williams Excavation.
“We are, first and foremost, bringing back Ray’s as what it used to be,” said Williams. “We want to make sure that we get the meat processing up and running once again.”
“We are constantly adding things back into the inventory,” said Williams. “Every week we are trying to add things back into the shop that we did not have the week before. And once we get that accomplished, the sky’s the limit.”
The market is known for a variety of meats, such as brats, homemade bacon, and other meats, some of which are smoked. It is also known for some specialty items like fruit pies, sausages and meat loaves.
“Not only are we doing the smoked meats and brats,” said Williams, “But we are bring back the availability of meat processing. That means that we will process venison, pigs and cows. Before we were even up and running, I had people contacting me to process this season’s venison. We hit the second season right as we opened. I have, never in my life, processed so much deer.”
“People want their deer meat either ground or made into ring bologna, summer sausage or sticks,” said Williams. “We do it all, even custom work, we go off of what the customer wants.”

“We are really excited to be here,” said Williams. “We are very passionate when we get into something, and the outcry of support that we have already received has been tremendous. We really appreciate our customers.”
