The Collective building at 400 N. Second St., formerly The Fairfield Food Collective and before that The Harper Brush building, houses various businesses to help promote local small food producers and restaurants.
A family business owned by Liza and Galen Saturley, and Denyce and Eric Rusch, The Collective has renovated the former office building to create commercial kitchens for rent in order for local food businesses to grow and thrive, while also providing a community space to gather and enjoy the many delicious products offered.
Among the businesses to be found there are The Bakehouse, Taco Dreams, Marmalade Sky gluten free baked goods, Hedge Apple Kombucha, Veraison wines, beers, and ciders, and Daydrink roasted coffee. Locally handcrafted vinegars and oils from Pickle Creek Herbs, Great River Maple Syrup, Scream Ice Cream, and traditional teas curated by Yao Cha Tea can also be purchased in the cafe space.
In addition to artisan breads and pastries during the day, The Bakehouse opens for pizza nights on Mondays and Wednesdays from 4-8 p.m. Friday evenings starting with “Happy Hour” at 3 p.m. where pizza by the slice and drinks are discounted, followed by live music beginning at 5 p.m. and pizza by the slice until 8 p.m. Sunday brunch is now offered at The Bakehouse, from 9 a.m. to 1 p.m. featuring sourdough waffles along with classic brunch offerings.
Breads, bagels, English muffins, pastries, coffees, housemade masala chai and teas are available from The Bakehouse, and breakfast and lunch are available from Taco Dreams beginning at 7 a.m. Monday through Friday.
Customers are welcome to sit inside or outside on the deck to enjoy the food and drinks offered by the businesses housed in The Collective building.
