Pekin culinary team crowned champions

The Pekin culinary team won the Fall 2022 Iron Chef competition hosted by Indian Hills Community College last week.
The teams each had two hours to complete a three-course meal with the theme of “Mexican.” The appetizer had to contain mango, the main course had to contain pork shoulder, and the dessert had to contain chipotle.
Pekin’s meal was comprised of an appetizer of margarita shrimp tostadas with a mango salsa drizzled with a roasted red pepper crema, a main course of pork shoulder birria tacos with a jalapeno Iowa sweet corn, and cinnamon chipotle flan with sugar sculpture garnished with raspberry and mint for dessert.
