May means beef eating season
The smell of tasty steaks and burgers are sure to fill the air as grilling season comes into full swing with the warmer weather

MT. PLEASANT — With celebrations of National Beef Month throughout May, Henry County Cattlemen President Adam Smith shares some of his favorite recipes for beef.
“May is usually kind of the kickoff for grilling season,” Smith explained. “So, there’s nothing better than putting on a good steak or hamburger.”
While throwing a steak or a burger on the grill can easily satisfy a hankering for red meat, Smith shared some ways that he even uses leftover meat like Prime Rib. When presented with leftover Prime Rib at Christmastime, he chose to cube up the meat and add it to breakfast burritos.
“I just throw a couple cubes in a skillet, warm them back up,” he shared. “Throw a couple eggs in there. Sometimes I throw in some onions, then I roll it all up in a tortilla with some hot sauce and cheese and there you go.
When looking for beef recipes, Smith encourages others to check out www.iabeef.org.
“There are all kinds of recipes and educational materials on there for teachers and everything,” Smith said.
The website also offers a link for these teachers to apply for financial support to help get more beef into family and consumer science classrooms. According to Smith, the website is a valuable resource for any consumer wanting to learn more about beef.
Just as Smith said, May kicks off grilling season not only for those at home, but also for the Henry County Cattlemen. The well-known black and white cattlemen trailer begins its grilling season this week with the opening of the Mt. Pleasant Farmers Market at McMillan Park.
“If you don’t want to cook that day, you can grab something and shop the fresh produce, too,” Smith said.
The trailer will make appearances at private and community events throughout the county with the nicer weather. Proceeds from the sales made at the cattlemen trailer go toward growing the next generation of the beef industry keeping with the organization’s mission to “ grow Iowa’s beef business through advocacy, leadership and education.”
The Henry County Cattlemen make donations to county 4-H and FFA organizations and family consumer science classrooms. They also give out scholarships each year at their annual banquet.
